
I am sitting on a bed in a hotel room in Taiwan while I am writing this blog post. Tomasz and Mia are in a kid’s room and this is something I would never visualise 4 years ago. Parenthood does change our lives. This recipe was ready for months now. I have so many posts, so many breakfasts to share and they are all on my computer. To be honest, I have no idea why it took me so long to start sharing them. I could explain myself with being tired and overworked and that I wanted to spend more time with Mia than in front of my computer. But to be honest, I think I just really needed a break. Now I have another dilemma and something to be slightly scared of – will I manage to go back to blogging as I used to? Cross you fingers for this one, please.
I do realise that blogging became a bit less popular nowadays, as Instagram is the number one thing. But I do love blogging!
I love sharing things, writing, photographing a story behind the main picture. Blogging makes me more creative and pushes me in interesting directions. I could tell you many stories about people I’ve met thanks to blogging and things I’ve experienced. It’s all thanks to blogging. I miss it, I honestly do. This is why I open a folder on my computer with a name of my blog and I start. I hope you’ll like it.
This is one of these recipes that you just want to make. It is good, homemade, could be a breakfast but also will make a strange, yet delicious cake. You can have it fresh, or take work. You can eat it all the first day, or you can store it in your fridge and eat piece by piece day by day. Your choice. But I have a feeling that you’ll eat it very fast.


YOU WILL NEED:
- ½ cup dried cranberries
- juice from 1 orange plus zest
- 150ml milk
- sugar 1 tsp + 4 tbsp
- pinch of salt
- 1 tbsp dried yeast
- 2 & ½ cup flour
- 400g seedless grapes
- 2 tbsp fresh thyme
Warm the milk, add one teaspoon of sugar and yeast. Mix it a bit and let it rest for a few minutes. It should start to foam.
Now lets make the dough. In a bowl, mix flour, 3 tbsp of sugar, pinch of salt and pour over the yeast mix. Mix with a spoon until ingredients combine. Then knead for about 8 minutes. You want your dough to be smooth and not gluey.
Brush bowl with an oil and place dough inside. Cover with a towel and let it rest for at least 1 hour. Meantime drain the cranberries and chop the thyme.
When your dough is ready, oil your baking tray (I used my iron pan). Divide the dough into two equal parts. Flatten the first part inside of the form and spread half of cranberries, thyme, orange zest and grapes inside. Cover with the other part of the dough and add the rest of cranberries, grapes and thyme. Cover with a tea towel and let it rest for another hour.
Heat your oven to 175*C (350*F), sprinkle 1 tbsp of sugar on top of the dough and bake for about 50 minutes, until it’s golden.
