Brussels Sprouts and Orange Toast

While you’re totally, 100% concentrated on the Christmas meals, remember, that it will not last forever, to be exact it will last only 3 days. What will happen then? You will be exhausted out of eating too much, but with time hungry again. You can start with this awesome toast idea. It is delicious, it is light and it comes from my friend’s cookbook, at least the Brussels sprouts part. It will be a good preparation for our new year resolutions, because lets be honest here – we are all guilty of dreaming to be a more healthier version of ourselves next year. And most of us fail… life I guess. But what if we start earlier with a small preparations? You have all the time from 27th till 31st!

Recipe comes from Samar Khanafer book “Szafran, mięta I kardamon”.

The Recipe

YOU WILL NEED:

  • 400g brussels sprouts
  • 2-3 slices of bread
  • ½ small red onion, sliced
  • 2 oranges
  • ½ cup almond flakes
  • 1 tsp dried colander
  • ½ handful fresh colander
  • pinch of cinnamon
  • pinch of salt and pepper
  • 2 tbsp olive oil
Heat your oven to 200*C (400*F).<

Grate zest from one orange and squeeze juice from half of it. Mix it with the olive oil and all the spices.

Clean the brussels sprouts and cut in half. Place them on a baking tray covered with a paper and pour the orange sauce over.

Bake for about 5 minutes, open the over to sprinkle sprouts with the almond flakes and the onion, mix it a bit and bake for another 5 minutes.

Meantime toast the bread slices. I like to do it on a pan with a lot of butter.

Cut the rest of oranges, cut the colander and mix with the sprouts.

Place sprouts on a hot toast and enjoy!

Enjoy, Marta
